The Brotherhood of Thieves welcomes restaurant veteran Donald Kolp back as their new General Manager, a position he previously held from 2005-2008. Returning to the island after three years as Beverage Manager at the famous Smith & Wollensky in Boston, Kolp brings both twenty-five years of culinary leadership experience and a personal appreciation of the local community to the job. A graduate of the Culinary Institute of America, Kolp began his career as a Sous Chef in California first at Stars and Stars Oakville Cafe in San Francisco and then at Auberge du Soleil in Napa Valley. After a teaching stint at The New England Culinary Institute, he opened his own restaurant, Smokejacks, in Burlington, VT in 1997 ultimately earning a Rising Star award from Restaurant and Hospitality Magazine. From 2008-2011, Kolp was Food and Beverage Manager at The Great Harbor Yacht Club overseeing the launch of club and supervising its multiple food and beverage outlets including a fine dining restaurant, a family friendly grill, multiple function rooms, two snacks bars and all off-site catering.

Leading the innovative culinary team at The Brotherhood of Thieves is Executive Chef Shaun Riley. Chef Shaun brings over twenty years of experience with his beginning starting at Disney’s Culinary Apprenticeship Program in Orlando Florida. Realizing his passion, he moved to Hyde Park New York where he studied Culinary Arts & Sciences and Restaurant Management at the Culinary Institute of America. On Nantucket, Shaun was the Executive Chef at The Even Keel Cafe in 2006, 2007 and 2011, the Sous Chef at A Taste of Nantucket in 2012 & 2013 and most recently the Executive Chef at Cowboys Meat Market and Delicatessen for the 2014 season. A seasoned talent with extensive experience in the culinary arena, Chef Shaun is committed to delivering great food and service to Brotherhood guests and is absolutely thrilled to be a part of the Brotherhood team.
